It's not straight oil. It's an oily broth yes, but not 100% fat.

For example, Shanghaiese food are known to be oily, Szechuan food are known for the spicy taste, etc. My personal favorite Chinese foods are all the dimsums, Claypots(oysters), mongolian beef, chinese styo beef steak, honey/miracle whip pecan prawns, GD, so many.... But nothing really fried or super unhealthy. I mean shit, the most unhealthy part of chinese food is probably the sauce they use, which is usually a mixture of oil, soy sauce, spices. Sauce is for dipping not for drinking. If you devour the whole thing including the sauce, then obviously its unhealthy.

by mentioning general tso's chicken at the beginning of the article made me think "boshet" and/or dumb to the article. like there's any one type of culture's food that's going to be really good or bad for you. well, fried chicken and waffles might be an exception.
